Looking for the Best

I made a meatloaf the other day to die for!!! It was the best tasting, most delicious meatloaf ever made in the history of meat loafing (even if I do say so myself). It was so good I brought it into work for lunch along with the potatoes and carrots that i baked alongside. Even the guys at work made comments as they could smell the aroma wafting thru the office via the microwave.

The only problem here is, it came from one of those pre-made mixes with the plastic bag. You mix all together with an egg and some milk (and hamburger of course) and put into the disposable bag with your veggies. I did add some jalapeno bread that I crumbled (maybe that helped).

So what's the problem?

It feels too much like cheating. I want to make one from scratch that tastes just as delicious as the pseudo Betty Crocker can make using one of those built -in- a -bag mixes. But considering I've only made meatloaf as many times as I have fingers on one hand (if that) I need some help. Especially since those previous meatloafs were pretty bad. Nothing to write about. fer sure.

Does anyone have a special, mouth watering to die for meatloaf recipe that I can try? Or if not.....any help at all for the meat loaf challenged amongst you?

In the meantime.....to the cookbooks I go in search of the elusive meatloaf recipe. Who knows....maybe my next post will have a new recipe for us all to try.

Darn, I thought for sure this was headed in a different direction.

The title reminds me of my wife's love or somewhat strange infatuation with the old movie Rocky Horror Picture Show. There's was the classic line there: "not Meatloaf again!" Of course it referred to the fact that poor Meatloaf, the late 70's, early 80's and beyond rock and roll musician had been made into dinner for the people in the movie.

Meatloaf is another of those performers that puts on a great concert show (thinking of the concert shows thread article), but I've only ever seen his stuff via DVD or other videos.


Of course I also remember Meatloaf for a bit part in the great Steve Martin movie: Leap of Faith. He played a bit role in that movie.

Memories of the Blue Mouse in Salt Lake (I also saw RHPS in Florida, California, N. Carolina and Saudi Arabia (in the day room), but no crowd compared to Salt Lake! ;~D

My aunt has the best meatloaf. I can't eat any other kind.

She says her secret is canned or fresh tomatoes. For some reason it keeps the loaf really juicy and yummy. No ketchup needed. And she puts one cup of oatmeal in her loaf too. I dunno...it sure tastes good though. She says it helps stick it all together after she juices it up with the tomatoes.

No one in my family will eat it but me, so what is the point?

Thanks Tova......I think I may give it a try.....no eggs tho? I'm not a big ketchup fan and I've already tried that and to me it didn't do anything for me or anyone else for that matter. But then again. I'm no expert here. The one I got from the pre-made mix had lots of spices and really had a nice flavor, and I guess I'm trying to duplicate that without having to go out and buy it pre-made.

I have a friend who takes pre-made herb packets and such from the craft stores and dumps it and dopes it out trying to figure out what they put in it and then writes it down and experiments and it's amazing how close she can get to the original. She makes our local crafter very angry tho cuz Cindy gives out the recipe to all of us once she figures it out. I've got a great borsin cheese receipe out of this method.

.........I was wondering how long it would take to bring up the "other" Meatloaf. I actually enjoyed his singing..... tho he wasn't much to look at.......I would have liked to have gone to one of his concerts.....which brings up a question.....Whatever happened to him?

KFC. I think using the internet, cookbooks, and of course asking JU posters for help will net you ( haha a pun
alot of ideas.

I don't follow recipes, I do like to try different things in my meatloaf though.

Ground pork adds lots of flavor for sure used along with the groundbeef! You can use either crushed soda
crackers or oatmeal as filler, I've used seasoned bread crumbs made by Brownberry? onetime. Yummy too.

I have to have chopped onion in mine, have used onion powder when out of onion, garlic powder is good too.
and a egg as a binder.

My mom would put bacon strips across the top of hers, I'd rather cook it up crispy and drain it, then put it with the
groundbeef.

Catsup is my usual tomato product, have used fresh roma tomatoes when out of catsup and frankly thery were better!

Green pepper is good if you like it, or/and celery. Depends on taste preference.

Yeah she uses eggs. I was just giving you a few of the ingredients she uses that a lot of people may not..ha.

Of course I love onions in mine as well....makes it taste more like a white castle, which I really love, ~shakes head~ I know I know.

I tried 3 different recipes for meatloaf, but one turned out horrible. Oh well as Meatloaf would say, "Two out of Three Ain't Bad".

btw ... who knew KFC made meatloaf now?

Ugh!! A friend of mine took me to White Castle as a treat when I was out in Illinois... again -- UGH! They weren't BAD... but dang... not on my list of delicacies, either... LMBO

Listening to old Meatloaf got me through one of the toughest years of my life. How sad is that?? .. Go check out "Two Outta Three Ain't Bad", J... and as your mother, I request that you avoid any meatloaf songs including "dashboard" or "paradise"...

Actually if you replace the ketchup with a mild bar B Q sauce it is even better. Arby's sauce is great but I don't think they sell bottles of it anymore.

Hey!!! That's one of my favorite movies! Your wife has good taste.

As far as meatloaf goes, well, it's meatloaf, Throw some meat and stuff together, bake it, cover it with something or other, and eat it.

Haha. That's how I do it. Whatever I have, I put it in there. I have two little boys who've been taught to praise everything that comes out of the oven (good daddy, haha!), so I never get any negative comments on it!

Having said that, LW's recipe sounds like a winner. I may have to try that one.
