Spring into Shaping Up

Ok, it's Spring......well sort of. We just got an eight inch or so dumping of snow last night. The electricity went off during our favorite show, "Are You Smarter Than a 5th Grader?" An answer was about to be revealed that I knew for a change. Some of those questions are unbelieveable. Anyhow, the electiricity didn't come back on until today at 11 am.

So, we dragged out the candles, lanterns and oil lamps for the second time in about a week. Thank goodness for all my water filled clorox bottles in the basement. It all started with a flicker or two, giving us enough time to gather up our materials and fill the tea kettle and water Pitcher for drinking water. Then all went dark and we settled in for the night. I read by candlelight for about an hour or so and then went to bed early. Nothing else to do. When I went to bed, I looked out the window and could see the trees were so heavily laden with snow it was no wonder we had no power. It looked like a winter wonderland out there.

Today is bright and sunny, actually quite pleasant. I'm thinking of going for a run later when the roads are a bit cleaner. I heard that Sunday we are in for a huge storm, bigger than we've had in the last 20 years I was told. Great. I've about had enough of this white stuff. Most likely we won't have a Spring this year. Instead we'll go right from winter into Summer. It won't be the first time.

Anyway, I got this recipe from a very health conscious friend. She's sort of my exercise guru and very good friend. She lives in Jersey so I don't get to see her but just a few times a year. For any out there that would like to try this, it sounds yummy.

She called them homemade Energy Bars, but to me they should be called Energy Balls.

1 cup dried figs (cut stiff top off first)
1 1/4 cup dates
1/2 cup sunflower seeds
1/2 cup walnuts
1/2 cup pumpkin seeds
chocolate chips
peanut butter
seseme seeds

Put the figs, dates, sunflower, walnuts and pumpkin seeds into a food processor with a regular blad and blend well. Add tiny chocolate or carob chips about 1/4-1/2 cup. Work in about 1/2 cup peanut butter. Roll into balls and then roll into seseme seeds. Store in fridge.

Feel free to experiment and substitute. These are yummy and filling but very good for you.
